Shasta Lentil Hummus

2 cups water

1 cup dried Shasta yellow lentils, rinsed and sorted. Remove any non-lentil material before cooking.

2 medium cloves garlic (minced)

3 tablespoons tahini

5 tablespoons olive oil or water (If you'd like an oil-free version, substitute more water, lemon juice and/or tahini.)

1/4 cup lemon juice (1 medium lemon)

2 teaspoons salt

1/8-1/4 teaspoon pepper (to taste)

1 teaspoon cumin

Rinse and sort dried lentils, removing any non-lentil material

Add lentils to water, bring to a boil and simmer 25-30 minutes until soft, then strain and cool

Combine lentils and remaining ingredients, except oil, in food processor or blender

Slowly add oil while food processor is on to emulsify ingredients 

If you want a creamier hummus, add more oil or water to reach desired consistency 

Season to taste

Serve and enjoy!

Sunrise red lentils are also delicious in this recipe. Use a blend of Shasta yellow and Sunrise red, or substitute Sunrise red completely.

Store in refrigerator for up to 5 days.
