Smoky Caviar Black Lentil & Red Miso Stew

Yields: 2-3 servings
Vegan, 30-minutes or less, Hearty
Smoky Caviar Lentil & Red Miso Stew

1 cup dried Caviar Black lentils, rinsed and sorted. Remove any non-lentil matter before cooking. (Madeline French green lentils are also delicious in this stew.)
3 cups water
1/2 onion diced
2 small carrots, cut into coins
2 stalks celery, cut into half moonies
1 TBS miso (organic red miso preferably)
2 bay leaves
Black pepper to taste, easy on the salt cause the miso is already there.
Cook veggies for a minute in a dry hot sauce pot (no oil needed)
Add lentils, water and remaining ingredients.
Bring to boil, lower to a simmer, stir often.
Depending on your knife skills and sheer will to cook, this should be done within 20 minutes.
