Created by Laurel at, these delicious lentil falafels whip together easy-peasy. As Laurel says, "You essentially add all the ingredients into the food processor and let it do the work for you. It dices the garlic, chops the herbs, minces the lentils and swirls the lemon juice and olive oil. Your falafel mixture is ready to roll!"

Another thing that we love about these falafels? You can use whatever lentils you've got on hand. Try it with PNW Co-op Pardina brown, Madeline French green or Caviar black lentils. Or use a blend of all three lentils. You're the boss, so make them your way. Enjoy!
