Dessert, anyone? This Chickpea Meyer Lemon Cake is simply delightful. Showcased by Elizabeth Nalbandian on the PNW Co-op Cooking Demo Stage at the 2019 National Lentil Festival, this cake replaces wheat flour with chickpea flour and almond flour. The result is delicious.
Making your own chickpea flour is easy peasy. Just toss dried PNW Co-op chickpeas into your food processor or Vitamix and grind them into a flour. We always recommend sorting and rinsing chickpeas prior to cooking, so make sure they're dried before you grind them.
