Cinnamon Chickpea Blondies

Ingredients:

1 1/2 cups cooked PNW Co-op York or Pedrosillano chickpeas (1 cup dried)

1/2 cup Almond Butter

1/4 cup Gluten-free Oats

2/3 cup Brown Sugar

1/4 cup Maple Syrup

1 Tablespoon ground Cinnamon

1 teaspoon Vanilla

1/4 teaspoon Baking Powder

1/4 teaspoon Baking Soda

1/4 teaspoon Salt

1/4 cup chopped Walnuts

Instructions:

• Preheat oven to 350 degrees.

• Line an 8x8-inch baking dish with parchment paper. 

• Combine all ingredients except walnuts in a food processor and puree until smooth. Pour batter 
  into prepared baking dish, using a spatula to smooth. Sprinkle walnuts on top.

• Bake for 30 minutes, or until the sides start to pull away and the top is firm. Let cool before slicing 
  into 9 squares.
