Chickpea Peanut Butter Balls

Ingredients:

1¼ cups PNW Co-op York or Pedrosillano chickpeas, cooked and drained

1/2 cup + 2 tablespoons all-natural peanut butter or almond butter

2 teaspoons vanilla extract

1/4 cup raw honey

1 teaspoon baking powder

Dash of sea salt

1/2 cup dark chocolate chips

Instructions:

• Preheat the oven to 350 degrees

• Pour everything but the chocolate chips into a food processor and combine until smooth, scraping down the sides of the bowl when necessary.

• Stir in chocolate chips.

• With wet hands, form the dough into 1½-inch balls.

• Place on baking pan lined with parchment paper, and bake for 10-15 minutes. Watch closely, so they don't burn. Remove from oven and cool
