Apple Ginger Chickpea Muffins

Ingredients:
1 3/4 cups cooked PNW Co-op York or Pedrosillano chickpeas (1 cup dried)

1/4 cup Olive Oil

1/2 cup Apple Cider

1/2 cup granulated Sugar

2 Egg yolks

2 Egg whites

2/3 cup Whole Wheat Flour

2 teaspoons Baking Powder

1/2 teaspoon Salt

1/2 teaspoon ground Cinnamon

1/4 teaspoon ground Nutmeg

1/4 teaspoon Powdered Ginger

1 cup chopped Apples

Directions:
Preheat oven to 325 degrees.

Line a 12-cup muffin tin with paper liners.

Puree cooked chickpeas in a food processor until smooth. Add oil, apple cider, sugar and egg yolks, then puree until smooth.

In a medium bowl, whisk together flour, baking powder, salt and spices. Stir in the chickpea mixture.
 
In the bowl of a stand mixer with whisk attachment, whisk the egg whites until soft peaks form. 

Fold the egg whites into the batter, then stir in the apples.

Scoop 1/3 cup of batter into each tin. 

Bake for 12-13 minutes or until a toothpick inserted in the center comes out clean.
