Yields: 4 servings
Vegan, 30-minutes or less

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Ingredients:
2 cups cooked Pedrosillano or York White garbanzo beans (about 1 cup dried beans)

2 Tablespoons olive oil

4 cloves garlic, minced

1 1/2 teaspoons ground cumin

1 1/2 teaspoons paprika

4 to 5 cups fresh spinach

Salt & pepper to taste

Instructions:
In a skillet, heat the olive oil over medium heat and sauté the garlic, cumin and paprika for 1 to 2 minutes or until fragrant.

Stir in the garbanzo beans and spinach and cook, covered, until thoroughly heated and spinach is wilted, about 5 minutes.

Season to taste with salt & pepper and serve.

Note: Serve this dish with crusty bread, sliced hard-boiled eggs, and little wedges of Manchego, along with a glass of your favorite red wine.
